These fluffy mounds of cheesy goodness are a crowd pleaser hands down! Who can resist the soft and salty combination of fresh bread and melted cheese? 🧀They make an easy grab-and-go idea for school lunches or as an after-school snack to curb hunger. Use as a savory alternative to hamburger buns 🍔, or your favorite sandwich 🥪.  

 

1 cup warm water

2 tsp sugar

2 1/2 tsp dry active yeast

Combine and let stand for at least 10 min.

 

1 cup milk

1/2 cup butter

Put in a microwave-safe bowl and warm until the butter melts then give a quick whisk

 

Add to the warm milk mixture

 

4 eggs

1/2 cup sugar

2 tsp salt

1 tbsp oil

Whisk until thoroughly combined and sugar is dissolved

 

In a large mixing bowl combine:

4 cups flour

Yeast mixture

Milk mixture

Gradually add 4 more cups of flour.

 

Once the dough starts to come together, roll it out onto a floured surface and need until smooth, (about 8-10 minutes)

 

Place dough ball into a large lightly oiled bowl, cover, and place in a warm, dry area to rise for 1 1/2 - 2 hours

 

In the meantime:

 

Melt 1/2 cup of butter, and 1 clove of minced garlic and set aside. In a separate bowl combine a blend of your favourite grated cheeses and set aside. (I used Cheddar, Mozzarella,  Pepper Jack, and Grana Padano)

 

Once risen, roll the dough out onto a floured surface. Using your palm as a size guide, tear off a piece of dough and roll it into a ball, then press down with your fingers until it is about 4 inches in diameter. Dip the bottom side into corn meal and place on a parchment-lined baking sheet. (The corn meal adds great texture and helps prevent sticking.) Continue until all the dough is used. This will make 2 dozen large buns or 4 dozen if you prefer a smaller roll.

 

Brush each roll with the melted garlic butter and top with the desired amount of grated cheese. Place in a warm, dry area and let rise for another hour.

 

Bake at 350° for about 20 -25 min or until golden brown. (Or 15-12 minutes if rolls are smaller)

 

Let cool a few minutes then transfer to a cooling rack.
