Viral Pickle Bread!

 

1 cup warm water

2 tsp sugar

2 packets dry active yeast

Combine and let stand for at least 10 min.

 

1 cup milk

1/2 cup sugar

1/2 cup butter

2 tsp salt

Put in microwave-safe bowl and warm until butter melts then give a quick whisk 

 

In a large mixing bowl combine:

3 cups flour

4 eggs

Yeast mixture

Milk mixture

Gradually add 5 more cups of flour. 

 

Once dough starts to come together, roll out onto a floured surface and need until smooth,

 

Place dough ball into a large lightly oiled bowl, cover and place in a warm dry area to rise for 1 hour

 

In the meantime:

Grate 3cups cheddar

3 cups Grana Padano (or parmigiano reggiano)

3 tbsp fresh chopped dill

2 tbsp smoked paprika

2 tbsp garlic powder 

2 tbsp Mrs Dash lemon seasoning 

Mix all to combine, set aside.

In a separate bowl chop 3 cups dill pickles and set aside.

 

Once dough has risen place on floured surface and punch down. Then divide into three equal portions.  

 

Melt 1/2 cup of butter 

 

Roll out 1 portion into a thin rectangle brush with melted butter and layer evenly 1/3 of cheesy/dill mixture, sprinkle 1 cup of chopped dill pickles,  then begin to roll making sure to pinch in the ends as you go. Once rolled up tuck ends in and place into greased bread pan. Repeat same process with other 2 portions. 

 

Allow to rise in bread pans for another hour. Brush each loaf with egg wash,  then convection bake at 350 until golden brown.
